  • 200 g whole wheat pasta
  • 400 g canned chickpeas, drained
  • tbsp olive oil
  • tsp paprika powder
  • 200 g fresh spinach
  • cloves of garlic, peeled
  • 50 g grated Parmesan cheese
  • tbsp roasted pine nuts
  •  salt and pepper to taste

Instructions

  1. 1 Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
  2. 2 Mix the chickpeas with 1 tablespoon of olive oil and paprika powder. Spread them on the baking sheet and roast for 20-25 minutes in the oven until crispy.
  3. 3 Meanwhile, cook the pasta according to the package instructions.
  4. 4 In a food processor, combine the spinach, garlic, Parmesan cheese, pine nuts, and remaining olive oil. Blend into a smooth pesto and season with salt and pepper.
