Ingredients

  • salmon fillets
  • 200 g quinoa
  • red bell pepper, diced
  • cucumber, diced
  • spring onions, finely chopped
  •  For the sauce: juice of 2 lemons, 2 tablespoons olive oil, 2 tablespoons fresh dill, finely chopped, salt and pepper to taste

Instructions

  1. 1 Preheat the grill to medium-high heat.
  2. 2 Cook the quinoa according to package instructions and let it cool.
  3. 3 In a large bowl, mix the quinoa, bell pepper, cucumber, and spring onions.
  4. 4 For the sauce: in a small bowl, mix the lemon juice, olive oil, dill, salt, and pepper. Pour half of the sauce over the quinoa salad and mix well.
  5. 5 Grill the salmon fillets for 4-5 minutes on each side or until cooked through. Pour the remaining sauce over the grilled salmon.
