4 salmon fillets
200 g quinoa
1 red bell pepper, diced
1 cucumber, diced
2 spring onions, finely chopped
For the sauce: juice of 2 lemons, 2 tablespoons olive oil, 2 tablespoons fresh dill, finely chopped, salt and pepper to taste

Instructions
1Preheat the grill to medium-high heat.
2Cook the quinoa according to package instructions and let it cool.
3In a large bowl, mix the quinoa, bell pepper, cucumber, and spring onions.
4For the sauce: in a small bowl, mix the lemon juice, olive oil, dill, salt, and pepper. Pour half of the sauce over the quinoa salad and mix well.
