  • cups oats
  • 1.5 cups unsweetened almond milk
  • large eggs
  • teaspoon baking powder
  •  pinch of salt
  • teaspoon vanilla extract
  • cup fresh blueberries
  •  maple syrup for serving

Instructions

  1. 1 Place the oats in a blender and blend into a fine flour.
  2. 2 Add the almond milk, eggs, baking powder, salt, and vanilla extract to the blender and mix until smooth batter forms.
  3. 3 Heat a little oil in a large skillet over medium heat.
  4. 4 Scoop a spoonful of batter into the skillet and sprinkle a few blueberries on top.
